Pickles, Ferments & Preserves

Sunday, August 10

5 hours 10am — 3pm

$240 per person

WHAT TO EXPECT: This class concentrates on making the most of what you grow or find at the markets. We will make a loaf of sourdough, prepare pickles and light ferments that are ready to eat as well as long lasting pickles and ferments. We will show you several ways to keep citrus savoury and sweet, prepare a jar of long shelf life pickles and do a little fermenting. While we’re waiting for nature to take its course we will enjoy a lunch showcasing the techniques we learn on the day. You will have what you’ve made in class and all the recipes from the workshop to take home. We will discuss various sour dough fermentations and will send you home with a starter. There will be a small supply of ferment kits and other more difficult ingredients to source available to buy.

Bread & Pastry Masterclass

September 13 & 14

What to expect

Day 1 — SATURDAY we will prepare our doughs and pastry that need an overnight rest and some fillings and garnishes to be used the next day. This will be an afternoon session from 2 to 6pm and an antipasto board will be served. We will cover sour dough techniques, traditional European bread making and as many pastries as we can; croissant, choux, short sweet and savoury, going over the basic techniques with lots of those professional tips that bring your dishes up a level.

Day 2 — SUNDAY  we will be proving our doughs, cutting, moulding, shaping and baking. We will start at 9am and finish a 1pm (likely to run till 2pm) a substantial brunch will be served. You will have what you’ve made in class and all the recipes from the workshop to take home. We will discuss various sour dough fermentations and will send you home with a starter. There will be a small supply of fresh yeast and other more difficult ingredients to source available to buy.

What to bring

  • An appetite for cooking and a big smile!

  • Wear comfortable enclosed shoes, short or tight fitting sleeves and have long hair tied back.  

  • We supply aprons, and can offer caps and masks as required.

Halloumi (Cheese Please!)

Learn to make cheese at home exploring three methods in this fun class! You’ll enjoy a delicious cheese platter and take home the cheeses you’ve made.

Chocolate

Temper chocolate to make handmade truffles.  We’ll create four fillings and a tart! A lunch of charcuterie & cheese board is provided with a banquet of the desserts we’ve made to finish.

Pizza & Mozzarella

Learn to make your own delicious mozzarella and use it to top your own pizza made from scratch.
